Minced meat and eggs tagine 

ingredients:
  • 1 onion
  • 350g lamb mince (or beef)
  • 5 eggs
  • 1 slice of bread
  • ½ tablespoon of cumin and cinnamon
  • ½ teaspoon ginger
  • 1 tablespoon ground coriander
  • 400 g tomatoes, peeled and crushed
  • 2 tablespoons chopped fresh cilantro
  • 2 tablespoons olive oil
  • salt pepper
method:

 Peel and finely chop the onion. In a bowl mix the meat with 1 egg. Add moistened bread crumbs, drained and crumbled and spices. Salt and pepper. Shape into small balls.
 In a large skillet, brown the meatballs with hot oil. Stir in the onion and crushed tomatoes. Pour 20 cl of water and let reduce slightly the sauce for 10 minutes.
 Prepare four hollow in the pan to lay the eggs without breaking them. Continue cooking until the egg white is well taken.
 Sprinkle chopped coriander and serve immediately.
