Custard Chocolate

ingredients:
  • 35 cl of milk
  • 50 g dark chocolate 60% cocoa
  • 1 vanilla pod
  • 3 egg yolks
  • 75 g of powdered sugar
method:
Pour the milk in a deep pan and heat it over medium heat. Split the vanilla pod in the lengthwise and scrape the small grains. Remove the beans and garlic in hot milk. Add the chocolate. Bring gently to a simmer point for that vanilla scented milk. Remove from heat.
2. Work the egg yolks and sugar in a bowl with a wooden spoon, until a clear, thick mixture. Pour the hot milk over the yolks and mix well.
3. Siphon the mixture into a clean saucepan and heat gently and let simmer 5 minutes, stirring constantly, until it begins to thicken and coats the back of a spoon. Do not boil, otherwise the cream turns.
4. Serve as an accompaniment to a cake or ice cream.
