Rice pudding in Portuguese

ingredients:
  • 1 liter of milk
  • 300g rice (long or RONZ)
  • 4 egg yolks
  • 250 g of 
    sugar
  • salt 
  • 1 untreated lemon
  • cinnamon powder 
method:
Cook rice in salt water.
When the rice is open, drain the rice.
Put the rice on low heat with the milk, lemon rind, stirring occasionally so the rice does not stick to bottom of pan.
Meanwhile, mix besides sugar and egg yolks.
When milk is almost evaporated, remove from heat and add the mixture (sugar, eggs).
Put everything on low heat for cooking the egg yolks, stirring constantly.
Put the rice pudding into ramekins. let cool and decorate with cinnamon.
